Recipes You Have to Try This Summer

With Summer Solstice right around the corner (Thursday, June 21), I wanted to share some of my favorite recipes that you have to try this season:

 
 

Greek Grilled Chicken Paillard

An easy-peasy lemon-squeezy, perfect-for-Summer recipe is this Greek-style Grilled Chicken Paillard by my friend, Pamela Salzman. It’s a delicious and fresh recipe, ideal for the warmer months like Spring and Summer. Pamela’s family even described it to her as ‘the perfect meal’. Variations of this recipe are great too, like using arugula and olive oil (and lots of lemon for me!), like she suggests in her notes.

 
 
 

Zucchini Shrimp Scampi

This lighter version of the traditional scampi served over zucchini noodles is a great Summer dinner option. I love the combination of succulent shrimp paired with zesty garlic...so what could be better? Oh, I know – no heavy noodles! The only change I might make to this recipe is making your own spiralized zucchini (it goes against my mantra of less gadgets in the house), and so many stores carry pre-spiralized veggies that it’s easy to just grab them at the market! I can’t wait to whip up this recipe very soon!

 
 

Grilled Salmon Kebabs

 

Grilling outdoors is a great way to take advantage of warm Summer evenings… and when I say that I am going to be grilling, I mean it. (My husband may be the only guy I know who doesn’t feel the need to hog the coals. And I may add, he prefers when I do it anyhow!) My favorite part of the unofficial ‘grilling season’ is dining al fresco, as it feels so nice to enjoy a meal outside in my garden. In order to make the most of these nights, I am always looking for new ideas and ways to grill. I recently came across this light and flavorful recipe for Grilled Salmon Kebabs, and it’s going on my grill list for sure!
